What is a good purchase rate for a course funnel?

That depends on your traffic quality, offer, price point and funnel design. Use your own historical data where possible for a more useful estimate.

Can I use this for organic traffic only?

Yes. If you are not running ads, enter 0 for ad spend and use the calculator to estimate leads, sales and revenue from organic traffic.

Why does ROAS still calculate when ad spend is 0?

To avoid dividing by zero, the formula uses a minimum value in the background. If you enter 0 ad spend, treat the ROAS figure as not meaningful and focus on sales and revenue instead.

Should I use average or exact conversion rates?

Average rates are usually best for forecasting. If your funnel changes often, test different scenarios to see a realistic range of outcomes.
